Chop veggies (except corn, beans and lime) and add into a pretty bowl.
Add lime juice, salt and cilantro oil, and mix well.
Serve with a handful of green salad and vegan burger.
Notes
You can use black-eyed peas, like in the the original recipe. For me it was easier to use red kidney beans, because it is way more accessible in my country, than black-eyed peas.
