Peanut Butter Quinoa Bars

Ingredients

  • 2 cups puffed quinoa
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  • Place all the ingredients into a bowl and mix together.
  • Line a pan with parchment paper, add mixture and firmly press down.
  • Put the pan in the fridge for at least 2 hours, preferably overnight. If you prefer, you can drizzle your bars with melted chocolate and peanut butter.

Notes

I like to use organic peanut butter, which doesn't contains any flavorings, salt, and palm oil.
If you drizzle your bars with melted chocolate, let it harden a bit before serving.
