Heat the coconut oil over medium heat in a pan. Once warm add the onion and garlic and cook for 10 minutes, until soft.
Add in the spices and cook for another minute, before adding the tomato puree and harissa paste. Cook for another 2-3 minutes.
Add the jackfruit along with a 1/2 cup of water to the pan and mix well. Cook for 15-20 minutes, stirring regularly.
Once the jackfruit is really soft, pull using two forks.
Before serving halve and heat the burger buns, or you can pan fry them for a couple of minutes, then add a big dollop of jackfruit stew on top of each halves.
Notes
Make sure to use unsweetened jackfruits for this recipe.If you don't have harissa paste, double the amount of chili.You can serve this with onions, lettuce and pickles, like a regular burger, but I like to round it up with - don't judge me please - home made sauerkraut.
