Halloween Cookies

Ingredients

  • 30 g coconut oil
  • 225 g pumpkin puree
  • 5 tbsp coconut sugar
  • 1 tsp Pumpkin Pie Spice or ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • 60 g almond flour
  • 150 g oats gluten free if possible
  • 100 g dark and white chocolate chunks save some white choc chunks for decoration
  • 1 tbsp activated charcoal

Instructions

  • Preheat oven to 180 degree C (fan function).
  • Melt the coconut oil and combine all the ingredients in a medium bowl. Set the dough aside for a few minutes.
  • Form the dough into balls of about 1.5 tablespoons in size. Press 3-4 small pieces of white chocolate on top of each cookies.
  • Bake in the preheated oven until golden, 12 to 14 minutes.
  • Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
