Preheat oven to 180 degree C (fan function).
Melt the coconut oil and combine all the ingredients in a medium bowl. Set the dough aside for a few minutes.
Form the dough into balls of about 1.5 tablespoons in size. Press 3-4 small pieces of white chocolate on top of each cookies.
Bake in the preheated oven until golden, 12 to 14 minutes.
Cool on baking sheets for 2 minutes, remove to wire racks to cool completely.
