The Viral Jennifer Aniston Salad

Ingredients

  • For the pickled onions
  • 1 small red onion very thinly sliced
  • 1 lemon
  • For the dressing
  • 2 tbsp tahini
  • 1/2 lemon juiced
  • 1 tsp mustard
  • 1 tsp date powder or maple syrup
  • 2 tbsp hot water
  • Pinch of salt
  • For the salad
  • 1 cucumber
  • 1 tin chickpeas
  • 1 tbsp chopped nuts pistachio, hazelnut, etc
  • Small handful fresh mint leaves
  • 1 drop of cilantro essential oil or fresh cilantro
  • 1 cup cooked quinoa or bulgur

Instructions

  • Start with macerating the onion. Place the finely sliced onions in a small bowl, pour over the juice of one lime, toss to coat and set aside while you prepare the rest of the salad.
  • For the dressing whisk together dressing ingredients.
  • Cut the cucumber in half, peel and scrape out the spoons using a spoon. Slice the cucumber.
  • To assemble the salad put all the ingredinets into a serving bowl, drizzle with dressing and toss to combine.

Notes

You can make the salad in advance, but in this case add the dressing just before serving!
Feel free to adjust the ingredients to your liking, or as Jennifer would like, and make it with less chickpeas.
I use DoTERRA essential cilantro oil in this recipe, and I'm serious about the quantity, one drop is enough! My bestie runs an online side business, and I always buy these oils from her. Feel free to skip this part, if you don't have cilantro or cilantro oil.
