Blended Overnight Oats

Ingredients

  • 1/2 cup oat flour
  • 1/4 cup plant milk I used unsweetened almond milk
  • 2 tbsp coconut yogurt
  • 1 tbsp date powder or maple syrup
  • 1 tsp vanilla extract
  • Salted Caramel Layer
  • 1 tbsp peanut butter
  • 1 tbsp coconut yogurt
  • 1 tsp date powder or maple syrup
  • Pinch of salt

Instructions

  • Mix oat flour, coconut yogurt, plant milk, date powder and vanilla extract in a bowl.
  • In another bowl mix peanut butter, coconut yogurt, date powder and salt.
  • Pour the peanut butter mixture over the base and refrigerate overnight.
  • Serve with fresh fruits.
