Sweet Fluffy Waffles

Ingredients

  • 1 cup oat flour
  • 1 cup plain flour
  • 1 tbsp baking powder
  • 1 tbsp date powder or any sweetener you like
  • 2 cups almond milk or you favorite nut milk
  • 2 tbsp lemon juice or apple cider vinegar
  • Pinch of salt

Instructions

  • In a mixing bowl, combine nut milk and lemon juice or apple cider vinegar and leave for 2 minutes.
  • Sieve in plain flour, oat flour salt, date powder and baking powder, mixing well.
  • Heat a waffle iron and let the batter thicken for a few minutes.
  • Spoon the waffle batter into the waffle iron, using a 1/2 measuring cup of batter per waffle. Cook for 8-10 minutes, or until golden. Remove from the waffle iron and repeat until batter has been used.
  • Serve warm with fresh fruits and coconut yogurt!

Notes

Waffle irons can be very different when it comes to cooking time, so please make sure you cook the batter until golden!
You can also lightly grease the iron with vegan butter or coconut oil, but I usually skip this step because my waffles don't stick to the waffle iron without greasing.
