In a bowl, mix together chia seeds and almond milk. Stir to combine and let it sit for 5 minutes.
After 5 minutes stir again and put in the fridge for an hour or preferably overnight
Preheat the oven to 200C (fan settings). Cut quince in half lengthways. Use a small sharp knife to remove the core, then cut into cubes. Mix cubes with date powder and bake on a lined baking tray for 35 minutes, or until soft and slightly browned.
When ready to serve, top with coconut yogurt, baked quince, granola and a tablespoon of maple syrup.
