Red Lentil Pasta with Vegan Home Made Pesto

Ingredients

  • 1 cup walnuts
  • 1 juice of a lemon save some zest for serving
  • 1 clove of garlic
  • 1 tbsp nutritional yeast
  • 1 big bunch of fresh basil
  • 1/4 cup olive oil you can add more if it's too dry
  • Sea salt and freshly ground black pepper
  • 180 g red lentil pasta

Instructions

  • Blend all the ingredients(except the pasta) in a high speed blender or a in a pestle until smooth.
  • In a large pot, bring water to a boil. Stir in the salt until dissolved. Add the pasta to the water and cook according to package directions. Drain and toss with the pesto. Adjust seasoning and serve with some extra olive oil and lemon zest.
