Pink Tortillas

Ingredients

  • 1 3/4 cups corn flour
  • 1/4 cup buckwheat flour or any flour you prefer
  • 1/4 cup water
  • 2 tbsp beet juice read more about coloring in notes

Instructions

  • In a medium bowl or in a mixer add corn flour, beet juice and water. Mix until dough is firm but moist. If necessary, add more water, or flour 1 tablespoon at a time.
  • Knead until the dough comes together.
  • Roll dough into golf sized balls to make about 12 tortillas. Flatten each ball into a small circle using a tortilla press or rolling pin.
  • Heat a cast iron griddle or pan over medium heat, no greasing necessary. When the pan is hot, place the tortilla gently pressing down with your hands. Cook for 15-20 seconds, then turn to cook for 50 seconds. Turn the tortilla once more and cook for an additional 50 seconds, or until tortilla is dry and light browned.
  • Wrap tortillas in a clean kitchen towel to keep them soft.

Notes

The more beet juice you add, the deeper pink color you get. If you wish to make pastel pink tortillas use only 1tbsp beet juice (or even less).
