Vegan Linzer Cookies

Ingredients

  • 500 g ground almond
  • 2 tbsp melted coconut oil
  • 4 tbsp flour
  • 12 tbsp maple syrup
  • 2-3 tbsp jam I used sugar-free strawberry jam
  • 1 tbsp powdered sugar

Instructions

  • Preheat oven to 180C, fan settings.
  • Place all the cookie ingredients into a food processor and pulse until smooth. Roll the dough into a ball and place in the fridge for at least 30 minutes.
  • Remove the dough from the fridge and roll it out on a flower sprinkled work surface to about 1 cm thickness.
  • Cut cookie shapes out, half of them with a little hole in the middle, or any shapes you like.
  • Place the cookies on a lined baking sheet and bake for 8-10 minutes until golden.
  • Once it's cooked and cooled start to make little sandwiches by spooning jam onto a cookie back and placing a cookie with a hole on top.
  • Dust with powdered sugar before serving.

Notes

You can use any kind of flour you like, and you can replace powdered sugar with powdered erythritol.
