Vegan Linzer Cookies

Nothing could be more festive on the holiday table than a tray of these, vegan, yummy, sugar-dusted, jam-packed cookies.
The Linzertorte is believed to have originated in the City of Linz, Austria in the early 1700s. Linzer Cookies use the same ingredients as a Linzertorte, only presented in a different way. That is, two almond flavored cookies are sandwiched together with a layer of jam. They are so pretty, with their top cookie dusted with a thin white coating of powdered sugar and a cutout so you can see the color of the jam. Since It’s a Christmas recipe I decided to cut cute, little tree shapes out of the top layers, and fill them with sugar free strawberry jam. As with sugar cookies, the dough for a linzer does not need to be too sweet. It’s filled with a tangy strawberry jam and finished with plenty of powdered sugar.

To be completely honest this is not the easiest cookie recipe I ever made, but it’s worth to try! The non dairy version isn’t easy to make either, so I don’t know why I expected the vegan version to be easy peasy lemon squeezy. Anyway, don’t let me discourage you, and give this Linzer Cookie a try this Christmas!

Hozzávalók:
500g mandula liszt (vagy te is lisztté darálhatod a mandulát, de óvatosan csináld, mert az olaj nagyon hamar elkezd kicsapódni!)
2 evőkanál olvasztott kókusz olaj
4 evőkanál liszt
12 evőkanál juhar szirup
2-3 evőkanál tetszés szerinti lekvár (én cukormentes eper lekvárt használtam)
1 evőkanál porcukor vagy por eritrit

Elkészítés:
Melegítsd elő a sütőt 180 fokra (légkeveréses funkció).
Tedd a süti hozzávalóit egy robotgépbe és keverd össze, majd kézzel gyúrd át, formázz belőle gombócot és tedd a hűtőbe legalább 30 percre.
Nyújtsd ki a tésztát 1cm vastagságúra és szaggass belőle tetszés szerinti formákat. Én a nagyim régi pogácsa szaggatóját használtam. A felének a közepét vagy egy kisebb kör formával, vagy tetszés szerinti formával szúrd ki.
Tedd a formákat sütőpapírral bélelt tepsire és 8-10 perc alatt süsd aranybarnára. Ha megsült egy lyukas és egy sima felet ragassz össze lekvárral, és hintsd meg porcukorral vagy por eritrittel, ahogy én is tettem.

Vegan Linzer Cookies

Course: Dessert

Ingredients

  • 500 g ground almond
  • 2 tbsp melted coconut oil
  • 4 tbsp flour
  • 12 tbsp maple syrup
  • 2-3 tbsp jam I used sugar-free strawberry jam
  • 1 tbsp powdered sugar

Instructions

  • Preheat oven to 180C, fan settings.
  • Place all the cookie ingredients into a food processor and pulse until smooth. Roll the dough into a ball and place in the fridge for at least 30 minutes.
  • Remove the dough from the fridge and roll it out on a flower sprinkled work surface to about 1 cm thickness.
  • Cut cookie shapes out, half of them with a little hole in the middle, or any shapes you like.
  • Place the cookies on a lined baking sheet and bake for 8-10 minutes until golden.
  • Once it's cooked and cooled start to make little sandwiches by spooning jam onto a cookie back and placing a cookie with a hole on top.
  • Dust with powdered sugar before serving.

Notes

You can use any kind of flour you like, and you can replace powdered sugar with powdered erythritol.
