Spaghetti with Red Lentil Sauce

Ingredients

  • 200 g spaghetti
  • 1 cup cooked red lentil see notes
  • 2 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 can tomato or passata
  • Olive oil
  • Salt, pepper
  • 1 bunch fresh basil

Instructions

  • Heat the olive oil in a pan over medium heat. Add the garlic and sauté for 5 minutes.
  • Add the canned tomato (or passata), tomato paste, lentils, salt, pepper and a little water if it is too thick.
  • Stir in the cooked pasta. Sprinkle sprinkle with freshly chopped basil before serving.

Notes

Red Lentil Cooking Time
5 to 7 minutes: Tender/firm
8 minutes: Tender/soft
9 minutes: Soft, starting to get mushy
10+ minutes: Very soft/mushy
Combine 1 cup lentils and 3 cups water. Bring the water to a boil, reduce to a low simmer, then cover and cook the lentils until they reach desired texture, anywhere from 5 to 12 minutes. Most, if not all, of the water will be absorbed by the lentils.
