Tofu Scramble

Ingredients

  • 150 g silken tofu
  • 1 tsp kala namak (black salt)
  • 1 tsp turmeric
  • Pinch of black pepper
  • 1 tbsp coconut oil
  • 2 slices of sourdough bread

Instructions

  • Excess fluid from the silken tofu.
  • Set it aside in a bowl whilst you melt 1 tablespoon of coconut oil in a pan. Add the tofu to the pan and gently run a fork through it, but do not over-mix.
  • Once the tofu is sizzling add a teaspoon of turmeric and stir in gently. The mix should become a golden yellow color.
  • Next, add the kala namak (black salt), and fold in gently.
  • Turn the heat off, and allow the silken tofu scramble to sit for a couple of minutes.
  • Toast your bread golden and put it on a plate. Spoon tofu scramble on top and sprinkle with chives and vegan Parmesan.
