Halloween Jackfruit Burger

This is the perfect Halloween treat 👻

Ingredients

  • 400 g jackfruit
  • 1 red onion
  • 1 garlic clove
  • 3 tbsp tomato puree
  • 1 tsp ground cumin
  • 1 tsp hot chilli powder
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tbsp coconut sugar or date powder optional
  • 1 tbsp olive oil

Instructions

  • Heat a lug of olive oil in a pan over medium heat. Sauté onion and garlic with a pinch of salt for 10 minutes.
  • Add in the spices and cook for another 2 minutes. Add tomato puree, jackfruit and sweetener, mix well and cook for 20-25 minutes, stirring occasionally.
  • Once the jackfruit is soft, pull using two forks or a spoon.
  • Make your black burgers, by filling the buns with the ragout, mustard, onions, and baby spinach.

Notes

If you have a favorite burger bun recipe, feel free to make that, but don't forget to add one tbsp of activated charcoal to the dough to turn it black.
You can make buns and ragout in advance, both are freezer friendly and keep well in the fridge for two days.
Feel free to serve burgers with your favorite toppings, such as sliced tomato, pickles, (vegan) cheese, ketchup, etc.
