Bellini

Course: Drinks
Cuisine: Italian

Ingredients

  • 4 tbsp peach pureé see notes
  • 1 tbsp sweetener of choice
  • Prosecco see notes

Instructions

  • Pour peach purée into a champagne flute.
  • Slowly pour Prosecco over peach purée and carefully stir to combine.

Notes

To make the peach purée add four peaches (peeled and de-stoned) and sweetener (honey, sugar, maple syrup, etc) into a blender or food processor and blend until smooth. Taste and add more sweetener as needed.
Prosecco is a sparkling wine made primarily in Veneto, Italy and  made with primarily Prosecco (aka “Glera”) grapes. If you can't find Prosecco use any kind of sparkling wine instead.
I used champagne cups instead of flutes, because I really like the way it looks on photos. Professionals recommend to drink your bubbly from a flute or a wineglass to keep all the aromas.
