Place all the cookie ingredients into a food processor and pulse until smooth. Roll the dough into a ball and place in the fridge for at least 30 minutes.
Remove the dough from the fridge and roll it out on a flower sprinkled work surface to about 1 cm thickness.
Cut cookie shapes out, half of them with a little hole in the middle, or any shapes you like.
Place the cookies on a lined baking sheet and bake for 8-10 minutes until golden.
Once it's cooked and cooled start to make little sandwiches by spooning jam onto a cookie back and placing a cookie with a hole on top.
Dust with powdered sugar before serving.
Notes
You can use any kind of flour you like, and you can replace powdered sugar with powdered erythritol.
