Pumpkin Gnocchetti

Ingredients

  • 200 g gnocchetti or gnocchi
  • 1 cup pumpkin puree see notes
  • 1/2 cup soy or almond milk
  • 1 tsp ground rosemary or sage
  • Salt
  • Pepper

Instructions

  • Cook pasta according to package instruction.
  • Blend the ingredients (except pasta) in a high speed blender until smooth.
  • Mix sauce with pasta and serve immediately.

Notes

To make pumpkin puree slice pumpkin into thick wedges and wrap it in tin foil. Roast at 200 degrees C for 40-50 minutes or until fork tender. Allow to cool for 20-30 minutes. Peel off skin and then add pumpkin flesh to a blender or food processor.
