Lemon&Poppy Seeds Overnigh Oats

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1 cup almond milk
  • 1 tbsp lemon juice
  • 1-2 tbsp date powder or maple syrup
  • 1 tbsp poppy seeds
  • 1 tsp lemon zest
  • 1 tbsp chia seeds optional
  • Pinch of salt

Instructions

  • In a bowl or a jar combine all the ingredients. Stir and chill overnight.
  • In the morning stir in more almond milk, if desired, for consistency. Top with desired toppings.

Notes

For a grab-and-go breakfast, you can assemble the overnight oats in jars with the toppings the night before.
