2tspbaking powder
1/2tspsea salt
1/3cupcoconut oil
1cupnut milkI used soy
4tbsppeanut butteroptional
Instructions
Preheat oven to 180 degrees, fan settings and line a muffin pan with liners.
In a large mixing bowl, mix together the flour, baking powder and salt.
In separate bowl mix nut milk and coconut oil.
Pour the wet mixture into the dry mixture and mix until just combined. Don’t overmix, overmixing the batter tends to make the muffins less tender.
Spoon into muffin tins, filling each cup about ¾ full. Bake for 30 minutes until a knife inserted in the middle comes out clean. Remove from the oven and allow muffins to cool before removing from pan.
Once it's cooled spoon some peanut butter on top of each muffins.
Notes
If you don't have cinnamon granola sitting in your kitchen cabinet, use grounded oatmeal, or oatmeal flower. For sweetness add one mashed banana, for the flavor add a good pinch of cinnamon.
