The Prettiest Pink Lemon&Garlic Pasta

A naturally dyed pasta made with purple cabbage and tossed with a delightful Lemon Garlic Olive Oil sauce. I’m excited to share with you an easy and fun way to create some romance with your loved one.

First you need to boil some purple cabbage in water for about 15 minutes. The water goes from being clear to that beautiful purple color, and this is the water you’ll use to boil your pasta!

When the pasta is al dente, toss it in a gorgeous Lemon Garlic Olive Oil sauce and watch it turn colors before your eyes! But why is it happening? The answer is simple, red cabbage contains a water-soluble pigment called anthocyanin that changes color when it is mixed with an acid or a base. Lemon juice is an acid which will make our cabbage-water pasta bright pink!

Be sure to toss the pasta in your sauce right at the table so that your friends and family can see the pasta change colors right before their eyes!

Hozzávalók:
1/2 fej lila káposzta nagyobb darabokra vágva
200 g linguini
1/4 csésze jó minőségű extra szűz olíva olaj
3 gerezd fokhagyma felaprítva
1 citrom leve
Só, frissen őrölt fekete bors
A tálaláshoz: vegán parmezán, citromhéj

Elkészítés:
Egy nagy lábast tölts fel a háromnegyedéig vízzel és főzd benne a lila káposztát 15 percig. A káposztát távolítsd el és tedd el, később még fel tudod használni például köretnek.
A vizet forrald fel újra, sózd meg és főzd benne a tésztát a leírásban megadott ideig.
Míg fő a tészta készítsd el a szószt. Egy serpenyőben melegíts olíva olajat és pirítsd meg a fokhagymát, de vigyázz, mert hamar oda ég! Ezután mehet bele a citromlé, só, bors.
Amikor megfőtt a tészta, szedd rá a szószra egy konyhai fogóval és nézd ahogy a szemed előtt válik rózsaszínné! Nem baj, ha kerül bele a főző léből is, sőt tehetsz is félre keveset, ha kellene lazítani a szószon. Mehet rá a választott feltét (citrom héj, vegán parmezán, stb) és tálalhatod is!

Color Changing Lemon&Garlic Pasta

Ingredients

  • 1/2 medium head purple cabbage, cut into large chunks
  • 200 g linguini
  • 1/4 cup good quality olive oil
  • 3 small cloves garlic, minced
  • 1 lemon, juiced
  • Pinch of pink Himalaya salt
  • Pinch of freshly ground black pepper
  • To serve: vegan parmesan, lemon zest

Instructions

  • Fill a large pot 3/4 the way up with water. Add your cabbage, come up to a boil, reduce heat, then cover with a lid and simmer for 15 minutes.
  • Remove the cabbage and save to sauté later.
  • Bring the water up to a boil again, adding a large pinch of salt. Add your linguin, and cook according to package instructions.
  • While your pasta is cooking, make your sauce. Heat a medium-large skillet over medium heat. The skillet should be large enough to fit your pasta. Add olive oil and garlic and sauté for a minute. Add lemon juice, and season with salt and pepper. Turn off the heat and let your pasta finish cooking.
  • Once your pasta is al dente, use tongs to add it to the sauce. Save some pasta water in case you need to thicken your sauce. Toss your pasta in the sauce and watch it turn bright pink! Top with your desired toppings (parsley, vegan parm, lemon zest, etc.), and enjoy!
